gorilla bread


so a few days ago i posted a headline on my facebook asking all my friends what i should bake next, i got some really great responses, thanks guys!! among all the replies my girlfriend mari suggested i make paula dean's gorilla bread. i had heard of monkey bread before, the pull-apart cinnamon bread that is altogether delightfully scrumptious, but gorilla bread?! that is new to me! i was craving something cinnamony, so i looked it up on the food network website. i think the best way to describe this bread is EXTREME monkey bread! but i will let you decide for yourself! here is the recipe:

Gorilla Bread

1/2 cup granulated sugar
3 teaspoons cinnamon
1/2 cup (1 stick) butter
1 cup packed brown sugar
1 (8-ounce) package cream cheese
2 (12-ounce) cans refrigerated biscuits (10 count) *this says 10 count, but when i went to get the biscuits they only came in packs of 8, so instead i cut up the cream cheese into 16 pieces, etc*
1 1/2 cups coarsely chopped walnuts
  •  Preheat the oven to 350 degrees F.
  • Spray a bundt pan with nonstick cooking spray. 
  • Mix the granulated sugar and cinnamon. 
  • In a saucepan, melt the butter and brown sugar over low heat, stirring well; set aside. 

  • Cut the cream cheese into 20 equal cubes. Press the biscuits out with your fingers and sprinkle each with 1/2 teaspoon of cinnamon sugar. Place a cube of cream cheese in the center of each biscuit, wrapping and sealing the dough around the cream cheese. 


  • Sprinkle 1/2 cup of the nuts into the bottom of the bundt pan. Place half of the prepared biscuits in the pan. Sprinkle with cinnamon sugar, pour half of the melted butter mixture over the biscuits, and sprinkle on 1/2 cup of nuts. 

  • Layer the remaining biscuits on top, sprinkle with the remaining cinnamon sugar, pour the remaining butter mixture over the biscuits, and sprinkle with the remaining 1/2 cup of nuts.
  • Bake for 30 minutes. 
  • Remove from the oven and cool for 5 minutes. Place a plate on top and invert.

 it was a very good choice, thanks again mari!! i only got one piece since my mom took it to work in the morning and i guess she said it disappeared. i will definitely make this again!! the cream cheese comes out soft and the chunks of cinnamon and sugar are like little extra bursts of sweetness with the warm biscuit...mmmm...yum! it actually kinda reminded me of a cinnabon, but BETTER! i think it is also because i used the same cinnamon the cinnabon company uses, my mom got it from penzey's! i hope this recipe works out for all of you in cyberland! let me know how it turns out!!^_^
