my mom and i decided to make dinner the other night since my dad is the one who usually does all the cooking. we decided to make my dad's "bistro mahi" since he is SOOO proud of it. and mom and i had the leftover pesto she had made so what better way to finish it off^_^ to make the mahi is actually fairly simple, yet it looks a lot harder than it really is. first you have your mahi steaks to season...
put a little garlic powder, salt, and pepper. then place in your heated pan with EVOO...
sear on both sides...
mmmm yumm!! cover with capers, my fave!!
and cover. turn off the stove and let sit for about 10 min. it should be completely cooked through when done. paired with the pesto pasta it was absolutely amazing and a great easy and delicious meal!!^_^
